In The StudioMONDO Kitchen: Spicy Thai Seafood Stew

Spicy Thai Seafood Stew
(Guy Mondo's Some Like It Hot Remix)

1-1/2 lb firm catfish fillets
1 tbl vegetable oil
4 onion finely chopped
4 cloves of garlic finely chopped
2 tbl Thai Prik King curry paste
2 small lemongrass stems finely chopped
1 tbl Madras curry powder
1 can of coconut milk
1 tbl fish sauce (nam pla)
2 - 3 slices of dried galanga
1 red bell pepper sliced into strip (or a combination of red, yellow and green bell pepppers)
3 Thai chilies sliced
1/4 to 1/2 cup shredded fresh Thai basil

1. cut fish into bite-sized chunks
2. Heat oil in a large skillet or wok. add onions, garlic, and curry paste and stir fry for 1 - 2 minutes. Add lemongrass and galanga and stir in the coconut milk and bring to a boil.
3. Reduce heat and simmer and add the fish and bell pepper and simmer for 2 - 3 minutes.
4. Serve over rice or cooked rice stick noodles* with lime wedges and chili slices

*if using rice stick noodles it's best to make this more of a soup by adding a little water or stock.
